Help: Former culinary art students or current Chef?

In culinary art school they have to cutting on fish, eel, lobster, octupus and what if they are afraid of them? Im curious because some people are afraid of them. And how they solve this problem??

The majority of the time would not be spent doing this task, only a slight portion of the time and you would be wearing gloves. There’s no better way to face your fears than head on. Why waste a chance to live your dream because of a fear that you would only have to face a few times before you had conquered it. Go for it, you can do it, just think of it as chicken.
