I was a chef for 20+ yrs here in Canada,Jamaica, Singapore and Japan, I never had to do much of that as they come ready for you, now in Japan that was another story, live fish is a delicacy there, but in North America and Europe, it is all frozen or fresh but cleaned, "live" octopus(s), eels and fish are rarely available, even those places were they have them in a tank are just for show, lobster are cooked whole and not cleaned most times or cut until after there fully cooked.
The same with meat, poultry and wild game, some Asian communitys will live the heads on, but commercial meats are not that way, so do not worry that your going to have to do the dirty work, it is not a science lab very often.

if you want to be a good chef, you will cut the eel, fish and octupus and everything else they throw in front of you. THe only way to educate your pallet is to taste the things. Even if they look gross. Dont be predjudice about food. A good chef has an open mind. This is how they can marry flavors well.
